The only inconvenience you might find in Nicaragua regarding traveling with kids is the high price of disposable diapers. Otherwise, traveling with children will actually open doors and make the friendly locals even friendlier. Of course, you'll need to make commonsense accommodations choices, like paying the premium for the all-inclusive resort, rather than staying at the hippy surfer hostel. Also, bus travel might be just too much to handle if you have a trail of toddlers or teenagers behind you. Locations like Granada and San Juan del Sur are the most child-friendly, and the Corn Islands will give any 12-year-old pirate lots of room to roam.
