In general, Vancouverites aren’t big fans of celebrity chefs from elsewhere coming to town and setting up shop—Daniel Boulud’s restaurant here lasted barely 2 years. But it’s been a different story for the Alsatian Jean-Georges Vongerichten. For one thing, his restaurant in the Shangri-La Hotel is part of his more casual “MARKET” brand (although it’s still fairly fancy for Vancouver); for another, his east-meets-west fusion fare is the way most locals like to eat anyway. Many of his most popular dishes can be found on the menu here, including the black truffle-and-fontina pizza and the rice-cracker-crusted tuna. The dining room is a serene space, with soft, gray, rounded booths and walls draped in chains of tiny gold beads, curvy glass chandeliers, and a sexy bar with funky silver seats. The glassed-in private room surrounded by urban towers is a popular place for business lunches. In summer, they open up the patio outside, and it’s a great place to enjoy a cocktail or glass of wine.
