Chef-owner-gardener Andrea Carlson has cooked at some of Vancouver’s top kitchens. Now she’s got her own place, and it’s a beauty. Burdock & Co is a tiny masterpiece of rustic minimalism, with brick walls painted white, reclaimed wood tables, and industrial-looking swivel chairs. You can usually find Carlson cooking in the open kitchen at the back, where she whips up an eclectic, passionately local, vegetable-forward menu. Dishes are all small to medium in size and meant to be shared, and everything is so good, you’ll end up ordering way more than you’d planned. The buttermilk fried chicken is perfectly crisp and tender, wheat berry risotto lusciously tooth-tender, and the squash gnocchi is sweetly savory. The wine is all biodynamic and naturalist, and there are a handful of craft beers and unique cocktails on the list as well.
