His farm-to-table concept embodies simplicity, relying on superb ingredients and stellar execution rather than a flurry of complex ingredients. Craft’s greatest strength is its top-quality, expertly cooked meats, guaranteed antibiotic-free, such as velvety roasted lamb sirloin and incomparable braised short ribs—but earthy ricotta cavatelli and wild mushroom pasta, and sides such as roasted baby eggplant, easily hold their own. The concept of simplicity reaches its greatest heights in the salads; the lightly dressed red Russian kale with pecans and Asian pear is sublime.
